Recipe: Creamy Peanut Sauce

I am a huge fan of peanut sauce. I will always order peanut dumplings if they're on the menu (fan fave: ChuChai Dumplings with Peanut Sauce), and please excuse me while I finish off that sauce with a spoon. The smooth texture, perfect combination of sweet and salty and tangy, and pairs perfectly with my favourite veggies and grains. The only issue is that I have never been able to recreate this flawlessness at home. 

Until now.

After trying dozens of recipes and store-bought alternatives, I have finally found the perfect from-scratch version. The best part is that it is so quick and easy to whip up, requiring only a few minutes prep time. I usually pour this over a quinoa base bowl with tofu or tempeh and whatever veggies I have on hand. Sprinkle some crushed peanuts or sesame seeds on top, and you've got yourself the perfect meal.

Creamy Peanut Sauce

Prep time: 10 minutes
Servings: 4
Nutritional information, per serving: 172 calories (13 grams fat, 9 grams carb, 5 grams protein)

Ingredients:

  • 1/4 cup (60 grams) smooth natural peanut butter

  • 1 medium garlic clove

  • 1 tbsp sesame oil

  • 3 tbsp reduced-sodium tamari (or soy sauce)

  • 2 tsp brown sugar

  • 1 tbsp sriracha sauce

  • Juice of 1/2 lime

  • 6 tbsp light coconut milk

  • 2 tbsp water (to thin)

Instructions:

  1. Put all ingredients in a blender, and blend until smooth.

  2. Pour over your favourite bowl and enjoy!
